Lunch Gathering


I haven’t been having parties at home for a long time because of so many sad or unpleasant things happening in the last few months but I finally had a couple of friends over for lunch today.  They were making cards here the other day and one of them asked me to show her how I make my Chicken, mango and avocado salad.  It’s very simple so just a recipe would have been enough but I know it always helps to see something being done in front of you.





I wrote this so many times in my blog but all I do is to marinade chicken breast in garlic, olive oil and lemon juice, then when the time comes I season it well, sear outside in a frying pan with a little olive oil and let the rest cooked in the oven for 10-13 minutes (some very thin breast would be ready in 5 minuets but 10 minutes is enough for most).  Let it rest a little after taking it out of the oven.  Then slice it and put it together with mango, avocado, lettuce leaves, mint, coriander leaves and toasted slice almond.  Today I used “five berry vinegar” as well as salt, olive oil and a little honey.  I vary my dressing depending on my mood.



I made 2 more dishes.  Couscous Salad.



And chick peas, red onion and rocket salad.


お2人からデザートにタルトをいただきました。レザミ系の 「Tarte」というお店のタルト。無花果もピスタチオも大好き。タルト生地もサクサクして美味しかったです。

They brought some tarts for dessert from “Tarte” – Les Amis Group.  I love both figs and pistachios.  They were very good!






We chatted for 6 hours over cooking, lunch, coffee and tea!  I had a lovely afternoon.
