Pork Braised in Milk

今日の夕食は、「私と夫と猫の幸せ生活」の Braised Pork(豚肉の煮込みですが、牛乳で煮込んでいます)にトライしてみました。玉ねぎとにんにくを豚肉と一緒にしっかり炒めて(わたしはお肉の外側だけ焼いて取り出してから玉ねぎとニンニクを炒めました)牛乳を入れてジュニパーベリーとセージ(わたしはフレッシュを入れました)を加えて煮込むだけですが、煮込んだ汁がとても甘くなってとても美味しかったです。ただ、肩肉を買ったのですが変な具合に切られていて、しかも脂身が半分以上固まってあったので食べられるところはほんの少し(涙)だったのと、煮込み時間が少し足りず(2時間煮込みましたがまだほろほろにはなっていなかった)残念でした。もっと良いお肉でまたトライしてみす。付け合わせは人参と芽キャベツ。

I tried a recipe that I saw on a Japanese blog – it says “Braised Pork” but it’s braised in milk.  All you do is to sautee onion and garlic until it’s nicely caramelised, then add milk, juniper berries and sage and slow-cook it with a lid on for 2 hours. The cooking liquid became very sweet and delicious.  Sadly the pork shoulder I bought was cut in a funny way (it was butterflied but not all the way and sort of hidden underneath of the package) and more than a half was fat so there wasn’t much meat to eat.  I also didn’t have enough time to cook it until fork tender.  I cooked it for 2 hours but it wasn’t as tender as I liked.  Still, it was good and I’ll try again with better pork.
