今日の夕食は、ちょっと久しぶりな気がするガッパオでした。香港でもシンガポールでもしょっちゅう作っていたので飽きたのか、それとも気候のせいなのか、イギリスに来てからはそれほど頻繁に作らなくなりました。グリーンビーンズがなかったのでシュガースナップピーと玉ねぎを加えました。何かしら少し歯ごたえがあるものを加えればOKな気がします。目玉焼きは日本式に蒸し焼きにはせずに、多めの油で白身がカリッとなるように焼きます。バジルはイタリア料理に使うバジルを使いましたが、量が少なかったのか見えません。美味しく出来ました!
Today’s dinner was Stir-fried Mince Pork with Basil (Thai). I used to make this very often in Hong Kong and Singapore but not so often here in England, I don’t know if it’s because we had it too often in the past or the weather doesn’t make us feel like having spicy food like this. We had no green beans so used sugar snap peas and onion instead, I feel as long as you have something slightly crunchy and don’t have strong taste it’s OK. I cook fried eggs in more oil than Japanese in general use because I love the crispy egg white. (Japanese in general cook fried eggs by adding a little water in the pan and steaming it because that way you don’t need a lot of oil and is more healthy. However, when you cook that way the egg white doesn’t get crispy and the egg yolks get covered with white film.) We used Italian basil and there wasn’t a lot of it so you cannot see it in the mince pork. Anyway, it was very tasty.
