Tea & Cake With A Friend

As my French Baking Class was yesterday, we asked a friend of ours, who loves sweet things, to come for tea and cake this afternoon.

However, tragically, the mont-blanc didn’t survive in the fridge, the meringue inside has gone soft and they were sort of flattened.  It’s very damp in England so I should have known. This happened in Singapore, too, I remember. So sad!  The Matcha cake was “acquired taste” to our friend, which is totally understandable.  There aren’t a lot of Patisseries around here so not many people have had proper French cakes, let alone any with matcha or azuki (sweet bean paste).   I will try to invite her again when I bake something that will keep well.
