Grilled Chicken & Salad

We went to a live Jazz last night again so we had a very early dinner at home before we went out.  I bought a jar of Pilpelchuma of Ottolenghi from an online supermarket and used it with some yogurt to marinade some chicken thighs and grilled them in a air fryer and had them with a salad that I made with left-over mixture of beans, sweet corn & chipotle paste from the day before, tomatoes, onion, red pepper, rocket, lime juice, olive oil, salt, pepper and croutons we made from the left over ciabatta from the day before.

Apparently, Pilpelchuma (also spelled pilpelshuma or filfel chuma) is an intense, spicy red chili and garlic paste that originates from the Libyan Jewish community. In Hebrew, its name literally translates to “pepper-garlic”.  I tasted a little of it and it tasted quite nice so used it for the marinade but it wasn’t so spicy.  I found online that it’s also used as a marinade for Shawarma and it did taste sort of like Shawarma marinade.  I marinaded them more than a whole day so the chicken thighs absorbed good flavour and tasted good and the salad was also great.
