Arancini

今日の夕食は、予定通り、昨日余ってしまったドライポルチーニとマッシュルームのポルチーニを使ってアランチーニを作りました。本場のシチリアのアランチーニはとっても大きなものでしたがお腹がいっぱいになってしまうので小さく作り、トマトソースを添え、他にサラミ類やトマトのブルスケッタなどと一緒にいただきました。

As we planned, we made arancini using the left-over dried porcini and fresh mushroom risotto from yesterday for today’s dinner.  In Sicily, they are quite large and often triangle-shaped but one of those would fill you up, so we made them small and had them with tomato sauce (I just reduce tin tomatoes) with salamis and a couple of tomato bruschettas.

実は、このアランチーニ、シチリアのお料理教室でも習ったのですが詳しくは覚えていず、レシピを見るのも面倒で想像で中にチーズを入れて粉をつけて卵をつけてパン粉をまぶして揚げましたが、お料理教室のブログを読むと「形を作って冷蔵庫で2時間寝かし、衣をつけてからまた冷蔵庫で1時間寝かさなくてはいけない」とありますし、小麦粉、卵、パン粉ではなく「小麦粉とお水を練ったゆるいペーストのようなのをつけてパン粉をつけて揚げます」とありました。確かに形が崩れやすく、大丈夫かしらと思いながら揚げたのです。崩れず揚がって良かった。

シチリアの旅行も楽しかったな〜。特にタオミーナがとっても印象に残っています、早くまた行きたいものです。

We made arancini at a cooking class we had in Siscily but I didn’t remember the details and I just couldn’t be bothered to find the recipe so I sort of winged it – just put some cheese in the middle, made small balls, dusted with flour, dipped in egg and coated with bread crumbs before deep-frying them.  Reading my blog just now about that cooking class, I wrote “These also need to rest in the fridge before and after you cover them with batter and bread crumbs”.  Also, you are supposed to use a gloopy paste made with flour and water instead of dusting with flour then dipping in egg.  I must admit they were quite fragile and I wasn’t sure if today’s ones would keep their shapes while being deep-fried, but fortunately they did.

We had such a good time in Sicily.  Taormina was particularly beautiful.  I’d love to go back.
