Black Bean Soup And Goat Cheese, Pear & Almond Salad


Today’s dinner was Soup & Salad.


Soup was Black Bean Soup with cumin and coriander leaves – one of the recipes I learned at a cooking classs long time ago.  It’s quick and easy.




Salad was Pear (Japanese La France), Goat Cheese & Almond Salad.  A friend of mine gave me some La France pears – they are from Japan, so fragrant, juicy and sweet! – so I wanted to use it for a salad.  I paired it (no pun intended) with goat cheese.  Goat cheese slices are covered with panko (bread crumb) and shallow-fried.  After covering with flour, egg and bread crumb I put them in the fridge for a while so it’ll be nice and cold when I cook it, that way they don’t completely melt when I shallow-fry them.  I made a simple dressing of usual vinegar, olive oil, salt and added a little Maple syrup.







Simple but very tasty.
