Pasta With Italian Sausage & Tomato Sauce


Unlike yesterday, it was a very cloudy day.  From the forecast it doesn’t look like we’ll get sun for a little while now.


Today’s dinner was Pasta with Italian Sausage & Tomato Sauce.  I sautéed finely chopped onion & garlic first, added chopped red pepper and sliced large red chilli (mild), sautéed some more, then added the Italian Sausage with fennel seeds (taken out of their skins).  When we don’t have the ones with fennel, I add some fennel seeds.  Then sauteed them trying to break the sausages into small pieces as I went, then added a tin of tomatoes.  Cooked for 20 minutes or so.  No salt as the sausages are already salty.  At the end I added some finely minced rosemary and it was done.   After plating, we grated some Parmesan cheese on top.. We used Rigatoni for the pasta today.  We enjoyed it very much.
