Chicken Breast Stuffed With Sausages And Wrapped In Bacon

It rained or was very cloudy all day today, not a nice day.

When we were at the butchers in Petworth on Friday, we saw chicken breasts stuffed with sausages and wrapped in bacon and marinaded in some green sauce, and we decided to try them.  We cooked them in the oven at 180C for 40 minutes and had it with roasted parsnip and Brussels sprouts. We found them a little too salty but it was quite good.  As it was wrapped in bacon and marinaded for the last few days, the texture of the chicken breast had become like ham.  They were quite large so we couldn’t finish all, I think we left about 1/3 each.  We put them in the freezer for a rainy day – we can use the slices for sandwiches or a salad.
