I had some pain in my lower back yesterday – I wasn’t doing anything strenuous, I just walked and the pain hit me! The pain shot me every time when I moved in certain way and it was hard to get up from the sofa. It didn’t seem so bad at first but as the day went on it got worse so I was quite worried if it would get even worse today, but fortunately it was much better when I woke up. I have to be careful for a little while, though, so I won’t do any more damage.
We cooked “Celtic Chicken” from this recipe (but Japanese only). You are supposed to use leek but we didn’t have any so we used onion, just thick slices. All you do is to sautee chicken thigh pieces (salt, pepper & flour first) in a frying pan, take them out, sautee onion, then pour in white wine (100ml) and chicken stock (200ml), put the chicken back, put the lid on and cook it in the oven (190C) for an hour. In the last 15 minutes, you add some sliced mushrooms. We had it with boiled new potatoes and green beans. The chicken was good, too, but the onions were specially tasty – meltingly soft and very sweet. It was an easy dish though it takes a bit of time in the oven.
