Mushroom Risotto


Today’s dinner was Mushroom Risotto and we used the Thermomix, we hadn’t used it for a while.  We do have to make some adjustment but using the Thermomix is nice and easy as it’s programmed and results in there being not a lot to wash up.  The recipe uses just fresh mushrooms but we use dried porcini as well, and add 2 minutes for cooking because we find the rice too hard and also add a little extra hot water at the end to make it a little looser.


Not in the recipe but we sautéed some extra mushrooms (I think these are shimeji, they came in a mixed mushroom pack) and put them on top of the risotto.
