Pumpkin Soup & House Salad

今日の夕食は、スープとサラダ。

スープは、パンプキンスープ。タマネギを炒めてかぼちゃを炒めてお水をひたひたに加えて、沸騰したら火を弱めてやわらかくなるまで煮てブレンダーにかけるだけ。今日はナツメグを少し加えました。

サラダは、冷蔵庫にあるものサラダ、ですが、サラミは買い足しました。ほぼお野菜ばかりですが、少しサラミが加わると味が深まる気がします。他は、タマネギ、ゆで卵、トマト、パプリカ、きゅうり、ひよこ豆、アボカド、松の実、オリーブ。ドレッシングは久しぶりにいつもの基本のフレンチドレッシング(お酢とオリーブオイル)とマヨネーズを混ぜてみましたが、やっぱりマヨネーズは入れない方が好みかな。

Today’s dinner was Soup & Salad.

Soup was pumpkin soup.  Very simple, I just sautee onion, add pumpkin, then add just enough water to cover the pumpkin and simmer until tender before putting it in blender, then salt, pepper and a little nutmeg.

Salad was “kitchen sink salad” type, just what I found in the fridge except that I did buy salami (with fennel).  I like adding salami to this type of salad, without it it seems a little boring.  Onion, boiled egg, tomato, pepper, cucumber, chick pea, avocado, pine nut & olive.  I added Japanese mayonnaise to my usual simple French dressing but I think I like it without mayonnaise.
