I needed to cook something soft to chew for dinner today, so I made Minestrone.  I used what I had at home – onion, garlic, carrot, potato, Japanese pumpkin, tin tomato.  I feel that when I use chicken stock it has enough depth of flavour but not when I use just water.  I wanted to keep it vegetarian today so I used just water and added a little Miso paste to add a little extra umami, then some Parmesan cheese and olive oil at the end.
