Vegetable Curry

今日の夕食は、野菜カレー、でした。タマネギを炒めてスパイスを数種類加えて炒め、缶トマトを少量加えてからお水を加えて硬い野菜から順番に入れて、カレールー、仕上げにガラムマサラ、といういつもの我が家のカレー。たまに煮込み用ビーフで作ったり牛ミンチを加えたりもしますが、ここ数年は健康のことを考えてほぼ野菜のみで作っています。わたしはビーフカレーを作ってもあまりビーフは食べないので、野菜カレーの方が好きだったりしますし、夫も野菜カレーが好きな様子です。入れた野菜は、タマネギ、ニンジン、じゃがいも、かぼちゃ、インゲン、ズッキーニ。

Tonight’s dinner was Vegetable Curry.  I sautee onions, some spices, then add some tin tomatoes before adding water, then add vegetables from hard ones to soft ones.  When all is cooked I add Japanese curry roux, let it dissolve then garam masala.  I have made beef curry with stewing beef and vegetables and sometimes some mince beef but in the last few years I almost always make it only with vegetables for our health.  I don’t eat a lot of beef even when I make beef curry anyway and tend to prefer vegetable curry and my husband seems to, too.  Vegetables I used are onion, carrot, potato, pumpkin, green beans & courgette.
