Massaman Curry (Vegetarian Version)


Today’s dinner was Massaman Curry. I learned the recipe from a Thai lady at a cooking class but changed it today from chicken-based to vegetarian. Today’s vegetables are butternut squash, small potato, aubergine, broccoli, small tomatoes. You are supposed to use peanuts but I used cashew nuts instead. It’s not spicy, it’s more sweet and sour with a little Indian spices. It’s a little sweet and a little sour.
