Chicken and Rainbow Vegetable Stir Fry

The weather turned out beautiful today although it was still chilly, not warm enough to sit out.

今日の夕食は、「Chicken and Rainbow Vegetable Stir Fry」でした。

Today’s dinner was “Chicken and Rainbow Vegetable Stir Fry”, but we were shocked when we started preparing it because the chicken, which is one of the main ingredients, was already cooked and pulled chicken rather than raw.  When we choose Hello Fresh menus for the week, we don’t look at the time that each meal takes to prepare, but this one was in the “extra rapid” category, so I guess they provide cooked chicken to shorten the cooking time. You have to stir-fry the vegetables anyway, and cooking strips of chicken takes no time at all actually, so I don’t see why they needed to do this.  We must check the ingredients before we choose the menus from now on.

So, all you do is to mix Sriracha sauce, soy sauce, Ketjap Manis, honey and lime zest together, stir fry the chicken and vegetables for a few minutes, add garlic and ginger and cook for a minute, then add the mixture of the seasonings.  That is it.  You squeeze lime juice over just before you eat.  It did taste very good, but I just wish we didn’t have to use ready-cooked chicken.
