Creamy Roasted Vegetable Curry (with Mini Naans)

It was a grey day all day with a little rain.  Even so, the temperature went up to 22C and somehow it didn’t feel cold.  It’s expected to get better from the weekend.

Today’s dinner was “Creamy Roasted Vegetable Curry (with Mini Naans)” from Hello Fresh.  You roast sweet potato and cauliflower in the oven and in the mean time make the sauce by sauteeing onion, then garlic and Korma curry paste before adding a pack of tomato, vegetable stock powder and water.  When the vegetables are done, you add them to the sauce, add sour cream, some sugar, and salt & pepper.

When we added the Korma curry paste it smelled lovely with a real “curry smell”, but when I tried it a little later, after cooking with a pack of tomato, it was like a sour tomato sauce.  So we added some cumin and coriander powder but it was still quite sour.  Although it says “creamy” what you add is not cream but sour cream so I guess that adds some acidity as well.  As we ate it tasted more and more sour and I really didn’t enjoy it.  If you aren’t keen on sour taste very much this isn’t for you.  I think it may be better if you have it with rice, as the rice will reduce the sourness, but it came with Naan so that didn’t help much.   I wonder if Korma curry paste is very sour.  We will have to be careful not to order this again or anything similar.
