Butter Chicken


Another cheating evening meal today.  We defrosted the chicken thighs that we froze a week or so ago and cooked Butter Chicken using The Spice Tailor’s “Classic Butter Chicken” kit.  We’ve used this once before and it was quite good, so we bought another one for an occasion like today.  This time we marinaded the chicken thighs in yoghurt and curry powder first.  All you do is to fry the spices and dried herbs quickly, add chicken and lightly brown them, add the base sauce and cook for a few minutes, then add the main sauce and cook the chicken until it’s done.
