Cold Peach & Parma Ham Pasta


It was another hot day.  It’s only 24C, so it is a spring or an early summer temperature in Japan but I feel the sun is very harsh here.  Still, as long as we didn’t do a lot inside the house, we had some lovely breeze so comfortable enough and at night it even felt chilly.


When it’s so hot, I crave for cold pasta and we made Cold Peach Pasta, which is very popular in Japan in this season.  The dressing is simple, lemon juice, olive oil, grated garlic and salt & pepper.  We added a little basil as well.  It was very refreshing, summery and tasty.  The peaches we used are flat donut peaches, they weren’t as sweet as at the peak time, still a little sour.
