Pancake Day



It’s “Pancake Day” today in the UK when many people make and eat pancakes.  We often forget it but we do have them for lunch if we remember.

Pancakes in the UK are more like crepes, very thinly made, same as the pancake used for Pancake Canellonni that my husband sometimes cooks.  In general, people sprinkle some sugar and lemon juice on one, roll it up, sprinkle a little more sugar and lemon juice and eat it, it’s very simple but very enjoyable.  We had some strawberries and raspberries so had some of them, too.





It’s March from today, already 1/6 of the year as gone.   As always, I felt as if the time had moved relatively slowly in January then speeded up.
