Chicken Tagine (Moroccan)

Although it didn’t rain it was very overcast again today, but as it wasn’t cold, I did some gardening.  Weeding as well as picking the dead leaves.  This time of year the leaves are coming off all the time so I don’t feel like picking them but it was looking so messy so I picked about 70% or so as I did weeding for an hour and a half. I expect my legs will be achy tomorrow.

A week has gone by and it’s a Saturday again.  Last night, my husband said, “Oh, no, I’ll have to cook tomorrow!  Please find a recipe for me!”  I said to him, “Coming up with a menu is the main part of cooking dinner!”  but I took pity on him and looked at Delia Smith’s website and chose a few easy looking recipes and sent them to him so he can choose one and he chose “Moroccan Chicken“.   He served it with couscous.  It wasn’t in the recipe but I asked him to add some chopped coriander leaves in the couscous, I think they add nice flavour.  He served it with green beans and glazed carrots.

One of the ingredients was preserved lemon and we happened to have a store bought jar of them that I got a long time ago so that’s what he used.  When we were living in Hong Kong, in the last few years, I was holding an entertaining class just for my friends and one time we made preserved lemons.  I liked them so used them a few times for dinners but one day my husband said he didn’t actually like preserved lemons so I stopped using them.  He said, today, though, that he didn’t mind it now so I think I’ll make them again because homemade ones were much nicer than store-bought.
