Soup (With What We Have)

It rained very heavily from around sunrise time until early this morning and the forecast for the rain possibility was getting higher from around 3:00pm but after all it didn’t rain in the afternoon or evening except a few sprinkles for a few minutes when we were driving back home after lunch.

Our dinner was soup made from onion, garlic, carrot, celery, leek, aubergine, tomato, sweet potato, red lentil, bay leaf, and onion koji.  We decided to have it as it is today and kept some for tomorrow’s lunch as it is, but I used a handy blender and emulsified the rest so we can have it for a couple of lunches in a different way.  It’s quite similar to Minestrone, but I cut the ingredients chunky, used fresh tomato instead of the usual tin tomato and used some vegetables that I wouldn’t use for Minestrone like aubergine & sweet potato and it was very tasty.  I think cumin will go well with this, or you can add curry powder or a mixture of spices when you sauté the vegetables,  I added red lentils for protein but should have added more as we didn’t really see them.  Red lentils tend to get very soft but add some thickness to the texture.  Green lentils would keep their shape and go with this sort of soup, too, and beans like butter beans would also go well.

The reason why I made a large portion of this soup is so we can have it for a few lunches.  At lunch time we don’t spend much time on cooking and tend to have something very easy like sandwiches, fried rice, fried noodles etc, unless there is some left-over and we get bored.  As there aren’t any nice cafes nearby we do tend to eat lunch at home most of the time so I’m trying to find a way to have more options.
