予報通り、ヒートウェーブになっています。今日は26度!数日前は最高気温13度でヒーターを入れていましたが、昨日はクーラーを入れて寝ました。毎回、ヒートウェーブが来る度にクーラーを入れて良かった〜!と心から思います。ロンドンは明日は31度、明後日は33度の予報になりました、暑すぎる。クーラーなしで過ごさないといけない人が多いので、大変だと思います。クーラーを設置できないお家もたくさんあるようですし、できないわけではなくても高いのでないお家が多いんですよね。
As forecasted, we are having a heatwave. It’s 26C here today. It was 13C highest just a few days ago so we had the heating on, but yesterday we slept with the aircon on. Every time when we have a heatwave, we feel so glad that we have aircons in our house. Apparently it’ll get as hot as 31C tomorrow and 33C the day after tomorrow in London, so hot! The majority of people in the UK live without aircon so I feel sorry for them, it must be so uncomfortable to sleep in this heat without it. Some properties cannot have air on and even of those who can have them not many do.
さて、タイトルにある、「ついに見つけた、美味しいレストラン」!Facebookで見かけた、つい2週間ほど前にオープンしたアランデルの「The Town House」というレストラン(上の階はホテルになっていて4部屋あるそう)に昨日行って来ました。お値段がお値段なので(コース料理のみで1人95ポンド、20000円、プラス税サービス、食後の飲み物はつかない)これで美味しくなかったら最悪だなぁと思いつつ、これまで何度もがっかりしてきたのであんまり期待しないでいようと夫と言いつつ伺ったのですが、結論から書くととても美味しかったです!このクラスのレストランには香港やシンガポールでは度々行っていましたが、イギリスに来てからはロンドンでのゴードンラムジー以外では皆無だったので(デボンのGidleigh Park はミシュランの星がついていますがこのレベルではない気がしています)、今どんな食材が流行っているのか、どんな組み合わせが新しいのかなどの情報がほとんど入って来ていないので本当に珍しいのかどうかはわかりませんが、わたしたちにとって珍しい食材が使われていたり、1皿にたくさんのエレメンツがあって楽しく、なんといってもシェフの熱意が感じられるのがとても新鮮でした。というのは、今住んでいるところは田舎のせいか、いろいろなレストランにトライしましたが、お仕事だからお料理している感じのシェフがほとんどで、特にベジタリアンのお皿に関してはどこに行っても同じようなお料理でとてもつまらなかったのです。この辺りで、「また行ってもいいね。」というお店はあっても「また行きたいね!」というレストランはこちらが初めてでした。
So, like I wrote in the title, we finally found a restaurant that we really like. We tried “The Town House” in Arundel, which opened only a couple of weeks ago (it also has 4 guest rooms upstairs) yesterday, I saw the information about its opening on Facebook. As it is rather expensive (they only have one normal tasting menu and one vegetarian tasting menu and it’s £95 per person plus service) we were hoping it was going to be good but we kept telling each other not to have too much hope because we’d been disappointed for so long. But it was great. We used to go to restaurants at this level of cooking quite often in Hong Kong and Singapore but hadn’t found any since we moved to England other than Gordon Ramsay in London, (I know that the resetaurant in Gidleigh Park has a Michelin star but we felt that The Town House’s cooking is at a higher level than there). We aren’t so familiar with currently popular ingredients or the combinations of ingredients so it might be just us, but there were some unusual ingredients used and each dish has many different and interesting components. Above all, I found it refreshing to see how enthusiastic the chef is with his cooking, and use of local ingredients etc. I don’t know if it’s because we live in the countryside but so far we hadn’t felt much enthusiasm from the chefs in the places we’d been to, specially for vegetarian menus which tend to be very boring with the same old ingredients and dishes. We have had a few restaurants where we thought “we could come back” but this was the first one we thought “we want to come back!”.

最初に出てくる小さな2品。1品目はマッシュルームそっくりのマッシュルームのメレンゲに色々乗ったもの(笑)。いろいろ使われているので覚えきれない。もう1品はもちもちしたベースにトリュフなどが乗ったもの。どちらもとても美味しくて、意外性があって、楽しいスナックでした。
There were two snacks to start with. The first one looked like a mushroom but it was meringue made to look that way. I cannot remember what things were on it because there were so many elements. The other was some chewy but fluffy base with cheese, truffles etc. Both delicious, interesting and fun.



1品目は夫のもわたしのも見た目は同じ。夫のものはラムのコンフィ、モレル、ターニップがジャージーロイヤル(ポテト)のムースとワイルドガーリックオイルの下に隠れていて、わたしのものはアスパラガスとモレルとターニップが隠れています。塩分が強めでしたがギリギリ美味しくいただけるラインでした。
The first dish – both my husband’s and mine looked the same. My husband’s had confit lamb, morel & turnip under Jersey Royal mousse & wild garlic oil. Mine had asparagus, morel & turnip under Jersey Royal mousse & wild garlic oil. It was a little too salty for me, but I know I prefer a lower salt level than most English, and it was just on the border line for me to be able to enjoy it. Other than that, it was delicious.

2品目はサワドーのパンとローストイーストバターとオリーブオイルとバルサミコ酢と、夫には和牛脂(お花が飾ってある方)。パンは冷たいまま出て来ました。個人的な好みではありますが、わたしも夫もサワドーのパンはそのままだとパサついて感じてあまり美味しく感じないものが多く、カリッと焼くかせめてオーブンで温めてある方がずっと美味しく感じます。
The 2nd dish was Sourdough Bread with roast yeast butter, olive oil, balsamic vinegar and my husband also had wagyu fat (the one with pretty flowers). The bread was served cold. I know we are all different but we find cold sourdough not so enjoyable as it tends to be dry and chewy, we enjoy it much more if it’s toasted or at least warmed up in the oven.


わたしの2品目は、マリネしたリークのバロティン、わさびとバターミルク(後から乗せてもらった白い粉状のもの)、リークの焦げた部分を粉にしたもの(最近、焦がしたものが流行ってますね)、昆布のマヨネーズ、アロエベラ。これが唯一、昨日いただいたものの中であまり美味しく感じなかったお料理でした。というのは大きなリークと小さなリークが組み合わせてあるのですが、大きなのはとても硬くてわたしはもう少し火を入れて欲しかった硬さでした、他の小さなリークはとても柔らかくて美味しくいただけましたが、個人的に乳製品の味が前面に出たものが苦手なのでバターミルクの味があまり好きではなかったのですが、これは本当にわたしだけのことだと思います。
My 2nd dish was Ballotine of Marinated Leeks, wasabi & buttermilk, with leek ash, seaweed mayo & Aloe Vera. This was the only one I didn’t enjoy so much. There were some very thick pieces of leek as well as much thinner ones and the largest one was very hard – too hard for me to enjoy – but I did enjoy the rest of the leek pieces as they were much softer. Another thing is that I don’t enjoy very ‘milky’ tastes so didn’t like the powdered buttermilk very much – but it’s just me, I’m sure.


夫の2品目は、「サセックスのデーボート・モザイク」。わさびとバターミルク、バーベキューした海老の出汁、アロエベラ。お魚はトラウトやシーバスなど近くで採れたお魚4種類。とても美味しかったようでした。
My husband’s 2nd dish was Sussex Dayboat Mosaic, made with 4 different fishes like trout, and seabass. This was served with Wasabi buttermilk, BBQ prawn dashi, and Aloe Vera. He said it was delicious.


わたしの3品目。春キャベツ、マスタードシード、キャラウェイ入りパン粉、味噌バター。上に乗っているシュレッド状のものはトリュフ。とっても美味しかったです。キャベツの火の入れ具合がシャキシャキで美味しかったですし、トリュフも美味しかった。グリーンのはワイルドガーリックオイル。ワイルドガーリックは旬なので、よく見かけます。お味噌もこのところとても流行っているようですが、使い過ぎてすごく塩辛くなっているものが多いのですが、こちらは美味しくいただきました。麹も入っているとおっしゃっていたと思いますが、どこにあったのかはわかりませんでした、コクを出すのに使われたのかな。
My 3rd dish was Glazed Spring Cabbage, pickled mustard seeds, caraway Pangratatto, and miso butter. The shredded thing on top of the cabbage was truffle. Delicious, too. The cabbage was cooked just right, not too hard but still very crunchy and I enjoyed the truffle, too. The green liquid is wild garlic oil. Wild garlic is in season so I see it on a lot of menus. Miso seems to have been very popular recently but often they use too much of it, which makes dishes too salty, but this one was very good, not too much in your face. The chef said it also used fermented rice (koji) but I didn’t detect it, I guess it was used to add depth of flavour.

Creedy Carver (ブランドらしいです)の鴨、スモークしたヘイハニー、発酵したルバーブ、ブラックプディング、カモの腿肉のコロッケ、紫蘇、スィート・シシリー(ハーブ)。
My husband’s 3rd dish was Creedy Carver Duck, glazed with smoked hay honey, served with fermented rhubarb, black pudding, a duck leg croquette, shiso, and sweet cicely.

チーズのコースの Tête de Moine、ピーカンとマスカバードのスポンジ、シェリー、乾燥させたブドウ、ウッドソレル。チーズコースは12ポンド(2560円)の追加料金だったので、1品だけオーダーしてシェアーしました。甘さもあるけれどデザートほどは甘くない、甘いものとセイボリーの中間みたいな感じで、とても美味しかったです。
The cheese course was Monk’s Head, on a peacan & mascavado sponge, with Pedro Ximenez sherry, dried grape, and wood sorrel. This was with a supplemental charge of £12 so we ordered just one and shared it. It wasn’t very sweet but there is some sweetness, something between sweet and savory. Very nice.

デザートは、ダークチョコレートの Namelaka、カカオニブ、バーチシロップ、パースニップ、ブリオッシュ。Namelaka は日本語のなめらか、で、以前も多分 Gidleigh Park のデザートに使われていたように思います。単に滑らかなムースのようなことかと思っていたのですが、調べてみるとチョコレートガナッシュとムースとカスタードの間のようなもので、ミルク、ヘビークリーム、ゼラチンで出来ていて卵や粉は使われないものだそうです。シェフはチョコレートのカスタードとおっしゃったと思います。そして、バーチシロップはメープルシロップのように白樺の木から採る汁を煮詰めたものだそう。シェフ自らたくさんの白樺の木から汁を集めて煮詰めて作られたそうです。味的にはちょっと酸味がある黒蜜のような感じでした。こちらも美味しくいただきました。
The dessert was Dark Chocolate Namelaka, with cocoa nib, birch syrup, parsnip ice cream, and a slice of brioche. I’ve seen ‘Namelaka’ before, probably at the Gidleigh Park, but I sort of assumed it just meant smooth (because namelaka means smooth in Japanese) but I looked it up and found that it’s a term used for something between a chocolate ganache, a mousse & a custard. It’s made of milk, heavy cream & gelatine, no egg or flour. I think the chef told us it was something like a custard. Birch syrup (the dots on top of the brioche) is made in the similar way to maple syrup, sap is collected from birch trees then cooked down. Apparently the chef collected it and cooked it down himself spending hours and hours. It tasted like mascavado sugar but a little sour. It was very nice, too.

プチフール2品。マドレーヌの上はななったかな。。。もう1つは苺のゼリーにオリーブのジェルのようなものがのったもの。こちらも美味しくいただきました。
Petit Fours – 2 things. One was something on a mini lemon madelene, I cannot remember what was on it… The other one was like strawberry jelly with olive gel, I think. Both very nice, again.

夫は白、わたしは赤のグラスワインをいただき、ガス入りのお水を2本、デザートと一緒にエスプレッソをいただき、追加料金のチーズコース1皿いただき、税、サービス込みで280ポンド(約6万円)。ひぇ〜、と思うお値段ですよね、特に日本円に換算するとびっくり。ですが、このレベルのお料理なので納得出来ます。
My husband had a glass of white wine, I had a glass of red wine and we had 2 bottles of sparkling water. We also had an espresso each with the dessert, which wasn’t included in the tasting menu. Including the supplement for the cheese course and the service charge, it was £280. Yes, it was expensive – it sounds even more expensive in Japanese yen!. However we feel OK about it because the level of cooking was very high and we know there is so much work that goes in to it.
少なくとも昨日はシェフと奥様お2人だけで、シェフも時々お料理を運んで来られていました。このレストランをオープンされる前はミシュランの星1つ付きのレストランのシェフだったそうですし、こちらのお料理もミシュランの星を十分いただけるレベルかと思いますが、勝手ながらついてほしくないなと思っています、ミシュランの星がつくとお値段がもっと上がってしまうので。と同時に、このアランデルでこのお値段を出して食事をしたいと思う人がどれくらいおられるかな、という心配もあります。ちなみに昨日は金曜日の夜でしたが、3組、うち1組は宿泊客ご夫婦、もう1組はウォークイン(予約なし)のご夫婦でした。レストランはあまり大きくなく、7組くらいしか入れないと思うのですごく人気が出ると予約が取りにくくなるでしょうし、でも、長く続けて頂きたいし、複雑です。
At least yesterday it was just the chef and his wife, the chef also serves the dishes himself. He had previously been a chef at a restaurant with a Michelin star (Sorrel in Dorking) before opening this restaurant and we feel this restaurant is worthy of a Michelin star, but I hope they won’t try and get it because the price will shoot up when they do. On the other hand, we do worry if they can survive with this level of pricing in Arundel. It was a Friday night yesterday and there were only 3 couples of customers including us. One couple was staying in one of the guest rooms upstairs and one couple just walked in off the street. The restaurant isn’t very large, I think it has tables for 7 couples, so it’ll be hard to get reservations if they become very popular, but we also would like them to do well.

それはほんとびっくりするようなお値段ですね。
でも、また行くのを楽しみにできるお店が見つかってよかった!
お料理ってシェフの熱量・集中力で本当に味が変わりますよね。
いいレストランは長く続けて欲しいから、ちゃんと儲かって欲しいし、かといってあまり人気が出過ぎても困るし。
ご夫婦でやってらっしゃると、「子供は持たない」という選択をなさることも多いようで、ちょっと胸が痛んだりします。
円安なので尚更高く感じますが
イギリスでも1人95ポンドはかなり強気な設定だと思います、
ミシュランの星を獲られたシェフだからでしょうけれど
小さな町でやっていけるのかな、という心配はありますね。
でも、行くのが楽しみなレストランがやっと出来たのは嬉しいです。
普段使いのお店もほしいですが。。。
