Baking Class (Creme Renversee A La Banana Caramel & Cake Ecossais)

Yesterday, I took this month’s French baking lesson of Ecole de Patisserie Chez Haru in the afternoon.  We had a flu jab in the afternoon on the day before and I guess I had some kind of reaction to that. I started having some strange feelings around my throat and also felt slightly unwell from the evening on Friday and it continued to yesterday.  It felt more like the end of a cold than the beginning so I was hoping it was a reaction to the jab rather than an actual cold – I’ve never had such a reaction before to any jabs.  As I was feeling the same yesterday morning I took some Japanese cold medicine just before the lesson started so as to feel better and fortunately I did feel a lot better soon and didn’t have any problem with taking the class, I was glad.

*Creme Renversee A La Banana(バナナのプリン)
*Cake Ecossais (ケーク・エクセ)

We learned how to bake:

* Creme Renversee A La Banana (Creme Caramel With Banana)
* Cake Ecossais

The creme caramel definitely tasted of banana, no doubt.  We had a small portion after lunch today and enjoyed it very much.

Cake Ecossais is apparently a very popular 2 layer almond cake that is very popular in Alsace  in France and Germany,  There are lots of finely chopped almonds on the outside, the the brown part is “masse chocolate”, then creme d’amande inside with some chopped dried figs soaked in rum.  It’s supposed to be the best after letting it sit for a few days but we couldn’t wait and had a little slice each at tea time today.  The almond bits outside give texture, the cocoa part is a little bitter and inside is moist with some fig texture.  Lovely.  It’ll get better tomorrow, and the day after tomorrow, so we’ll look forward to tasting it then.
