Beet, Avocado, Lentil, Goat Cheese & Walnut Salad



I had lunch with a few friends at Jaan today, but there are so many photos to edit and I’m feeling very sleepy so I’ll do them tomorrow.


I had quite a big lunch (although I didn’t think I ate that much as each course is very small), I wasn’t hungry at all but I needed to cook something for my husband so I made a salad.  Beet, avocado, lentil, goat cheese and walnut salad.  I feel we don’t need avocado but we happened to have one that was just nice and ripe at home so I decided to use it.  After cooking lentils in boiling water, I seasoned them with wine vinegar, salt, pepper, olive oil and cumin powder while still hot.  I made dressing with usual basic vinegar, salt, olive oil but added some maple syrup and mustard.  As I say, I wasn’t hungry at all so I had just a large spoonful of it but it tasted good.  I do feel avocado adds extra dimension with that special texture and I like it.
