Sous Vide Prosciutto-Wrapped Chicken Roulade


My husband told me that he was going to cook chicken using our new Anova (Sous Vide machine) today and I told him I didn’t think it was such a good idea because I’d seen someone saying Sous Vide chicken is horrible.  I was worried that the texture might be too blobby – I like tender chicken but I don’t like it when it’s too tender.  He still wanted to try, saying you don’t know until you try…  I asked him not to get mad at me if I didn’t like it…

作ってくれたのは、「Sous Vide Prosciutto-Wrapped Chicken Roulade」(チキンの生ハム巻き)。夫はなぜかチキンの胸肉に詰め物をして生ハムで巻く、というお料理が好き。低温調理器だともっと柔らかく(気持ち悪い柔らかさに)仕上がると思ったのですが、普通でした。ただ、オーブンで焼くと中から詰めているチーズが流れ出てきてしまうのですが、流れずに中に止まっていたのでしっかりゴーとチーズの味がしたのと、出来上がりがきれいでした。中に詰めているのは、ゴーとチーズ、赤パプリカのロースト、ロケット。付け合わせは、ローストポテト(小さなポテト)といんげん。

He made “Sous Vide Prosciutto-Wrapped Chicken Roulade“.  For some reason my husband loves to make chicken filled with something (usually cheese) and wrapped with Parma Ham.

Well, the result was surprisingly very similar to what you cook in the oven after all; it wasn’t more tender.  However, when he cooks in the oven often the the filled cheese would come out of it, while using the Anova, it was still contained inside the chicken.  It was filled with goat cheese, roasted red pepper and rocket, and he served it with green beans and roasted small potatoes.







As the filling is green and red it looked very pretty,




Sadly, for some reason, one of the two he made burst.  My husband thought maybe he didn’t make the chicken breast thin enough.





It was very good.  The chicken breasts were too big so we couldn’t finish it all, but I’ll make a salad with the left-over for tomorrow’s lunch.


So we’ve now used the Anova for Beef, Pork and Chicken.  Maybe eggs next?
