Chicken Cutlet with Salsa

今日の夕食は、チキンカツにしました。薄くスライスしてパン粉をつけてオリーブオイルで揚げ焼きにしています。サルサ(中近東料理のときにモロッコサラダと称してよう作るもの、トマト、赤玉ねぎ、赤と黄色のパプリカ、きゅうり、たっぷりのシャンツァイ、レモン汁、塩コショウを混ぜています)とローストポテトと昨日の残りの生ハムを添えました。このサルサとチキンカツの組み合わせは、夫もわたしも大好き。揚げ物ですがレモン汁たっぷりのサルサでさっぱりします。

Today’s dinner was Chicken Cutlet with Salsa. I slice chicken breast thinly, then put some flour, egg and bread crumb and fry it with olive oil (not deep fry, just about 5mm of olive oil in a frying pan).  Salsa is made with tomato, red onion, red  yellow pepper, cucumber, a lot of coriander leaves, lemon juice and salt & pepper).  Also with some roasted potatoes and left-over Parma ham from last night.  Both my husband and I love the combination of chicken cutlet and salsa – salsa makes it nice and light.
