Roasted Vegetable Couscous Salad with Harissa-style Dressing

この2、3日、あまりお野菜が入らない夕食が続いたので、今日はお野菜をたっぷり食べられる夕食にしました。Delia Smithの「Roasted Vegetable Couscous Salad with Harissa-style Dressing」の応用。オリーブやフェネルは入れず、バジルをシャンツァイに変えています。ラタトゥユに使うお野菜をオーブンでローストして、クスクスとピリ辛のソースと一緒にいただくもの。チキンを添えることもありますが一昨日チキンを食べたばかりなので、今日はフェタチーズをのせました。お野菜が甘くなって美味しいです。

I felt we hadn’t eaten a lot of vegetables in the last couple of days, so I decided to cook “Roasted Vegetable Couscous Salad with Harissa-style Dressing” from Delia Smith.  I don’t use olives or fennel and use coriander leaves instead of basil.  I sometimes cook chicken and serve it with this but today I served just this with some feta cheese on top.  Vegetables become so sweet and I like the aromatic, tangy and spicy dressing with couscous.
