Caprese & Minestrone


Today’s dinner was Caprese and Minestrone.  I forgot to buy basil so I used parsley for Caprese.  A little different way of a presentation today.






As I was going to write this I realised I’d forgotten to take a photo of the Minestrone soup.  Too late.  I also forgot to use cabbage.  The reason I decided to make the Minestrone was I wanted to use some left-over cabbage!  Oh well…

I used onion, garlic, carrot, leek, potato & Kabocha.  After stir-frying all except potato and Kabocha, I added water, potato (just peeled and cut in half – I break it after it’s cooked for 20 min or so until tender) and simmer for 20 minutes, then add Kabocha and cook for anther 5 minutes, turn the heat off and add a very small amount of miso for the depth of flavour (umami).
