Chicken, Mango, Avocado & Mint, Almond Salad


Today’s dinner was Chicken Salad.  I used chicken breast, mango, avocado, mint, coriander, almond and salad leaves.  As always I marinaded chicken breast in garlic, olive oil & lemon juice, pan fried outside then cooked it in the oven for 10 minutes so it’s tender and juicy.


The avocado wasn’t great but it was still enjoyable enough.  Personally, I think the crunch and nuttiness from almond and mint are very important.  It’s still good without them but they elevate it to the next level.
