Thai Dinner At Home

I cooked Thai food for dinner today, it’s been a little while since I made this last.  A friend of mine gave me a recipe for Thai Aubergine Salad (maybe arranged in a Japanese way as she found it online) that she made some changes to her liking, so I wanted to try it.  The other dish is Stir-fried Mince Pork With Basil that I often cook (but less of it and without fried egg today).

The table setting doesn’t go with Thai food but I wanted it to look good with the bouquet I made today and also suitable for Easter.  My husband also looks forward to my flower class day every month.  He doesn’t know many flowers – probably only roses, tulips, carnations like a typical guy – but he seems to love it when there are flowers at home that aren’t the usual orchids that we can get everywhere here.

Thai Aubergine Salad.  I used a small aubergine so there was probably too much toppings of mince pork and onion but it was very nice.  I peeled the aubergine because I find the skin of aubergines I buy here are very tough even after cooked, I don’t know if that’s because they aren’t fresh or it’s just the type of aubergine.  The seasonings is basically the same as authentic Thai salad dressing but the cooking method was a little different.  I didn’t use dried-shrimp that was in the recipe.

Both good but we got so stuffed…
