Chicken Breast In Garlic, Lemon Juice & Olive Oil

Tonight’s dinner was Chicken Breast (marinaded in garlic, lemon juice & olive oil, then cooked outside in a frying pan with a little olive oil after seasoning well, then cooked through in the oven) with boiled carrots, oven-roasted potato and green asparagus.  Chicken breast cooked this way is tender and juicy.  Although it’s very simple, it is very flavourful and we like it.

I was going to buy white asparagus but they were not there in Huber’s.  I do see them in Market Place almost all the time and we’ve been served in restaurants but I guess in Huber’s they only sell them when it’s the season in Germany, which is I think middle of May.  We missed the chance last year so I’d like to get them this year.

When oven-roasted, asparagus gets much thinner.  There was plenty of chicken breast (a little too much, so we actually left a couple of slices each so we can make sandwiches for lunch tomorrow) but we could have had a lot more vegetables.
