Pasta & Vegetable Bake


Our nephew and his girlfriend arrived in Singapore after travelling in Australia and New Zealand for a little less than half a year. They’ll stay with us for a week, then they’ll continue their travelling to Korea, Japan then Russia.  They arrived very early this morning, had a sleep, late lunch, then just chilling in the afternoon.  Unfortunately, it rained and thundered a lot this afternoon so they weren’t able to relax by the pool.


Our nephew’s girlfriend is a vegetarian, so I cooked a pasta bake.  I searched my blog to see what I cooked last time they were here (already 2 and a half years ago) and it was also a pasta dish.  It’s just that a pasta dish seems like the easiest option for cooking for a vegetarian – something easy, filling and in general popular amongst young people.


Today, I chopped a courgette, an aubergine and some red and yellow pepper in large chunks, covered with some salt, pepper & olive oil and roasted in the oven.  At the same time I cooked a tomato sauce with onion, garlic, basil, fresh tomatoes & a tin tomato.  I put all of that together with cooked pasta in a gratine dish, topped with some pizza cheese, Parmesan cheese and bread crumbs and baked it in the oven for 20 minutes and served with a small salad.


I just downloaded photos from my camera thinking I’ll edit them – then realised I forgot to take photos at the dinner completely, except the one I took before we started dinner.  Oh dear….



After dinner we chatted about their travelling up to now and plans from now on, as well as many other things and when we looked at the time it was nearly 11.00pm, which was time for my husband to go to bed.
