Sicilian Spaghetti Alla Norma


I still seem to be having migraine.  Not bad enough to have to take a painkiller but I don’t feel normal yet, hopefully I will soon.

さて、今日の夕食は、Jamie Oliver のレシピの「Sicilian Spaghetti Alla Norma(シチリア風スパゲティー・アラ・ノルマ」。茄子とケイパーが入ったトマトベースの簡単パスタ。

Today’s dinner was Jamie Olvier’s Sicilian Spaghetti Alla Norma.


By the way, I often come across with recipes (including this one I followed today) that you have to salt the aubergine to get rid of bitterness before using.  Do you really have to do that?  I do that when I have time because I find that they absorb less oil that way, but I don’t think it makes much difference to the taste.  I have used it without salting but they didn’t have any bitterness.  In Japan people tend to put them in water or salted water, I think, but I don’t know if it’s necessary.


Sadly, maybe because I’m not feeling 100%, I added too much pasta water!  I did reduce it by bubbling it up but in the end result wasn’t so good.
