Black Bean Soup And Chicken & Mango Salad


Like it often happens, I was too full from lunch – or so I thought – but once I started eating I was able to eat.


My husband had Black Bean Soup first.  I gave it a pass.



Then, our chicken salad that I often make.  I bought avocado a few days ago and let them ripen up in the kitchen but none of them were good… so it became Chicken & Mango salad.  Salad leaves, mint, coriander, almond slices and chicken.  Chicken breast was marinaded in garlic, lemon juice & olive oil and the dressing was thick Balsamic vinegar, lemon juice, olive oil, salt & pepper.



I cannot come up with a menu for tomorrow’s dinner….  I seem to be having more and more trouble with coming up with a menu these days.
