Japanese Vegetable Curry

明日から旅行なので色々な材料を余らせたくなかったので、今日の夕食は家であるもの。前回作った時に多めに作って冷凍しておいた野菜カレーにしました。入っていたのは玉ねぎ、ポテト、かぼちゃ、インゲン。人参は冷凍すると食感が変わっておいしくないので冷凍せずに食べてしまい、今日新たに加えました。他にズッキーニをさっと炒めたものも加えました。

We are going away tomorrow so I didn’t want to buy ingrediants and leave some behind, so we had what we found at home.  When I made vegetable curry last time I froze the left-overs so I defrosted that and added some boiled carrot and sauteed courgette.  I don’t like the texture of frozen (and defrosted) carrot so I take them out before freezing curry and add newly cooked ones when serving again.
