Vegetable Curry


Sadly, I came down with a cold last night.  Such a bad timing as I’m leaving for a short trip soon.  I had a cold in January, why now again?  I didn’t catch a cold for a long time then this.  Oh well, so far it seems like just a light cold, hope it won’t get worse.


So I wasn’t in the mood to cook so I cooked something easy, can be frozen and what my husband lovces – vegetable curry.  As always I cook it something between Indian way and Japanese way (but closer to Japanese).


There was no potato ato home so I used tin tomato, carrot, onion, garlic, sweet potato (both Japanese and Australian), Japanaese Kabocha, brocooli.  I used all the tin tomato that was left from last time when I opened it so it had more tomato than usual.
