Harira Soup And Beet & Goat Cheese Salad

Today’s dinner was Soup & Salad. Soup was Moroccan soup called Harira. I don’t use meat, although you can, but I do use chicken stock. Salad was Beet, avocado, goat cheese (grilled) and pine nuts.

Harira Soup My husband liked it so much that he said “The best soup ever!”. He always said this when I made him Costa Rican black bean soup (that’s why I make it often) but he said he may like this one even better. Both have spices like cumin and coriander so I think they’re quite similar, although from completely different countries. The recipe is here.

Salad was Beet, avocado, goat cheese (baked in the oven) and dry roasted pine nuts.
