Avocado Toast


We don’t have anything on today.  My husband was out to get some parts he needed to repair a lamp, then repaired it this morning.  We could have gone out in the afternoon if the weather were better, but it’s very grey and cold so we are staying home with the heating on, doing whatever we want to do as well as doing some household chores.


Today’s lunch was Avocado toast, which we haven’t had for a while.  We bought a couple of avocados a few days ago and they were just nicely ripe, not watery, and had good flavour – not excellent, but good enough.  We toasted some slices of firm bread, spread Japanese mayo over, then topped each with avocado, tomato, salt, pepper, and pine nuts.  On the salad, just a little drizzle of good quality balsamic vinegar and salt & pepper.  Simple but delicious.






We often buy one of those bags of mixed salad leaves but we haven’t found what we like yet, not a lot of crispy leaves.  Also we find that they are so wet (much more wet than those we were buying in Singapore), that they go off so quickly.  When you move to a different country, it takes you a while to find even little things like this.
