Thai Beef Salad

It was soooo hot today!  It went up to 33C!!  Even when the humidity is low, above 30C we feel hot just sitting around.  My husband and I said to each other we didn’t feel like doing anything as we get so hot whenever we do anything.  It did go down to 27C in the evening, which isn’t too bad.  It looks like it’ll be hot for the next few days but not as hot as today, I’m glad.  You need air-conditioning above 30C!

I had my hair cut in a hair salon today after 4 months of not being able to go to one.  I did have my hair coloured in Chichester but I had been having my hair cut in London.  I was going to make a booking somewhere near after asking our interior designer where she goes to, but the lockdown happened before I managed.  It took me a while to be able to book after re-opening and today was the day.  I was dreading being hot in the hair salon but fortunately they did have an air-conditioning so it was comfortable.  Not many hair salons in England have air-conditionings so I was so happy when it felt cool there.  To be honest I’m not so happy with the shape of my hair style but I won’t know for sure until tomorrow morning when I wash and dry it myself, but at least it’s shorter again!

On such a hot day, one wouldn’t like to cook in front of a stove, but thankfully we didn’t have to as we had left-over steak from last night.  We were planning to use it for a salad and that’s what we did.  I hadn’t decided between Thai beef salad and more western or Japanese style but with this hot weather Thai seemed appropriate.  We used shallots, tomatoes, cucumber, Romaine lettuce, Rocket, mint & coriander as well as the steak, and I made a dressing with lime juice, fish sauce, sugar and chilli flakes.  It was delicious if I may say so myself.  I really feel I like steak best when it’s cut thick and cooked with the sous-vide low temperature cooking equipment (ANOVA).
