Pasta All’amatriciana


We cooked Pasta All’amatriciana for dinner today because we wanted to use the guanciale we ordered a couple of weeks ago.  I haven’t found Bucatini in any supermarkets or farm shops here (I guess you can get them from some online speciality shops), so we used spaghetti.  Pasta All’amatriciana is usually tomato sauce with guanciale in the restaurants I’ve been to, but it looks like you are supposed to use fresh tomatoes and don’t cook until tomatoes become liquid.  We followed Genaro’s recipe.  It was quite tasty.
