Minestrone Soup


We had Minestrone for the evening meal today using what we had at home – garlic, onion, celery, carrot, potato, cabbage, tin tomato, bouquet garni, organic vegetable stock powder, salt, pepper & olive oil.  I have a feeling we don’t have this very often these days, maybe I cooked it too often sometime ago.  After plating it we grated Parmesian cheese on top then a drizzle of delicious olive oil.  I usually use a little miso just to add the depth of flavour (not enough to be able to tell there is miso in) but I’d forgotten that we finished the pack so no miso today.  It was still very good.
