Chicken Breast Stuffed With Blue Cheese Wrapped With Bacon


Today’s dinner was chicken breast stuffed with blue cheese wrapped with bacon.  We would have chosen pancetta or Parma ham but didn’t have them today, so used bacon.  You first colour the outside of the stuffed and wrapped chicken in a frying pan, then put it in the oven and cook for 15 minutes at 180C .  We thought it was slightly over-cooked, so next time 12 minutes.  When you cut it, melted blue cheese oozes out.   It was very good.  We have some left-over (they were quite large chicken breasts) we’ll use it in a salad tomorrow for lunch.  Side dishes were carrots and Brussel’s sprouts.
