Banh Mi (Vietnamese Sandwich)


We kept the leftover Vietnamese Lemongrass Chicken and Vietnamese Coleslaw from yesterday so we could use them for Banh Mi (Vietnamese Sandwiches).  All we did was putting the chicken, coleslaw, coriander, mint and lettuce into a halved piece of  bread.  The bread is French baguette, which isn’t as squashy as Vietnamese ones so it was a little different, but still very tasty.




Initially we forgot to put in any coriander or mint but as soon as I had a bite I remembered them and added them.  Mint seems to make a big difference, it makes it taste more Vietnamese.
