玉ねぎ(薄切り) 半分
赤パプリカ(太めの薄切り) 1個
ニンニク(大きめの微塵切り) 2かけ
チョリソー(スライス) 適量
フレッシュの大きな赤いチリ(マイルドなもの) 1つ
クミン(シードを乾煎りして粉にしたもの) 小さじ半分ちょっと
コリアンダーパウダー 小さじ4分の1くらい
パプリカ(今日は忘れてしまい後から思い出しました) 小さじ1
缶トマト 1缶
水 4分の1カップ程度
玉子 4個
シャンツァイ 適量





Today’s dinner was Shakshuka.  I’ve had it in a few cafes and my image of the dish is onion, eggs in red pepper & chorizo in spicy tomato sauce. We searched for recipes online but there seems to be all sorts of different ways to make this, so after reading a few of them I just made it up.  It came out very tasty.  What we used today were:

1/2 Onion (sliced)
1 Red pepper (sliced)
2 Garlic cloves (chopped)
Chorizo (About 15cm sliced)
1 Fresh mild red chilli
A little more than 1/2 tsp Cumin powder (dry-roasted and powdered from seeds at home)
Some Coriander powder
1/2 tsp Paprika (I meant to use this but forgot today!)
1/2 tsp Harrisa
1 Tin tomato
About 1/4 cup Water
4 Eggs
Some coriander leaves


Sautee onion & red pepper in a shallow heavy pan in olive oil for a few minutes, put the lid on and cook slowly, stirring now and again until they start getting soft.  Add garlic, chorizo & chilli pepper, stir everything together, put the lid on and  continue cooking slowly until the vegetables are soft.  Add cumin powder, coriander powder & paprika, stir everything together, add a tin tomatoes, some water & Harrisa, chopped coriander stems and leaves, put the lid on and cook for further 20 minutes or so.  Drop eggs in, put the pan in the oven and cook until eggs are done – egg white cooked and egg york still a little soft.  Scatter coriander leaves.

If chorizo is mild you can add more chilli or more Harissa, I think you can add more vegetables or less as you like.

It was very tasty.  I read that they use potatoes as well in Tunisia, that sounds good.  We often have chorizo in the fridge and have all the other ingredients most of the time, and it’s quick to make.  I’ve seen vegetarian versions, too.
