Pasta With Roasted Mini Tomatoes & Mozzarella


We have a lot of mini tomatoes because of a mistake I made with ordering groceries, so we roasted some and used them for a pasta dish. Just mix tomatoes with salt, pepper, olive oil and dried oregano, roast at 200C for about 15 minutes or so.  I just heated chopped garlic in olive oil slowly so the oil gets the flavour of garlic, then added the roasted mini tomatoes, the juce from the tomatoes, some chopped olives (tomatoes become very sweet after roasting so some salty olives work well, we used the ones stuffed with garlic and chilli today as that’s what we had), add the pasta (needing one or two more minutes to cook) plus some cooking water, stir it quickly until the pasta is the right texture, add salt & pepper, take it off the heat, add mozzarella & basil and it’s done.


This is a sort of pasta I really love and I enjoyed it very much. My husband used to dislike long pasta but he seems to have changed and tells me he enjoys it now.
