Sausage Casserole


Today’s dinner was Sausage & Vegetable Casserole (although I didn’t use a casserole, I used a braising pan).  Sausages are M&S ones with apples, which we buy often.  Vegetables used are onion, carrot, potato, celery & tin tomato, and the herbs are a bay leaf and dried oregano – very simple.  We didn’t simmer it too long, only until the carrots were tender because the sausages loose their flavour if you simmer them for too long.  When it’s done I made the sauce thicker by using a mixture of corn starch and water.
