Roasted Vegetable, Couscous & Chicken Breast


It was grey, with rain and a little sun now and again today, too cold to wear short-sleeves already.  I hear there will be another mini heatwave but it doesn’t look like it’ll get ‘hot’ around here.  Maybe just London and a small area around there.

今日の夕食は、ロースト野菜のクスクスサラダ、レシピは Delia Smith の Roasted Vetetable Couscous Salad With Harissa-style Dressingを元にしています(が、フェネル、ニンニク、ゴートチーズも入れていません)とチキンの胸肉をニンニク、レモン汁、オリーブオイルにマリネして焼いたもの今日はクスクスにシャンツァイをたっぷりと、塩胡椒、レモン汁、スマックを加えてみました

Today’s dinner was Roasted Vegetables with Couscous – from Delia Smith’s recipe.  The base is her “Roasted Vegetable with Couscous Salad With Harissa-style Dressing”  (but no fennel, garlic or goat’s cheese) with chicken breast (marinaded in garlic, lemon juice & olive oil, then seared both sides in a pan and cooked in the oven).   Today I added a lot of chopped coriander leaves, salt, pepper, lemon juice & sumac to the couscous.


Not so much couscous but there is quite a lot of roasted vegetables and chicken left, probably enough for 2 more meals.
