Cold Pasta With Peach & Parma Ham


Today’s dinner was Cold Pasta for the first time this year (although we did have Chinese cold noodles the other day) – Peach & Parma Ham Pasta.  I’ve written a recipe before and that’s more or less how I make it, although I sometimes change it up a little.  The peaches we used today were not so sweet so I used white balsamic instead of wine vinegar when I marinaded it and added a little honey to the dressing when I seasoned the cold pasta.  I used peach, Parma ham, rocket leaves, basil & mint today, I like it with lots of black pepper.
