Chicken & Avocado Salad


It was good weather today, going up to 23C during the day and I think it went up to 26C or 27C in London.  I don’t think it can be called a heatwave, though.  I wonder if there really will be a heatwave next week, it doesn’t look like it on the weather forecast.


Today’s evening meal was Chicken & Avocado Salad.  We bought 2 large avocados and had one yesterday for sandwiches and it was quite good, so we used the other one in this salad.  I think they were the best avocados we’ve had since we came to England.  They didn’t  have a very strong flavour but they did have that sticky texture, which is very characteristic of avocado.  Crispy bacon bits would have worked well but we had no bacon, Parma Ham would have also worked well but we didn’t have any of that, so we added some salami.  Mango would have been a great addition also but I know they aren’t good here (unless you get them from some special shops) but I’d given up on that.  I made the dressing creamy, though, so it’ll cling well to the salad, I just added a little honey and some Japanese mayonnaise to the simple dressing that I normally make using lemon juice, olive oil, salt & pepper, it goes well with chicken and avocado.  When I saw the photos I thought “I should have added some pine nuts!”  Sliced almonds would have been good, too.  Some kind of nuts would have added a nice nutty taste as well as the extra texture.
